Low Fat Strawberry Poppy Seed Bread
Made by: Donna Chestnut, Outpatient Dietitian at St. John`s Hospital
3/4 c skim milk
1/3 cup applesauce
2 eggs *
2 cups flour
3/4 cup sugar
1 Tbsp Poppy Seed
2 tsp baking powder
1/2 tsp salt
1 cup chopped fresh strawberries
*In place of 2 whole eggs may use � cup Egg Beaters or 4 egg whites or 1 whole egg and 2 whites
Heat oven to 350 degrees. Spray a loaf pan with cooking spray.
Mix milk, applesauce and eggs in a large bowl. Stir flour, sugar, poppy seeds, baking powder and salt together.
Pour the wet ingredients into the dry and mix until flour is moistened.
Gently stir in the strawberries. Pour into the loaf pan. Bake 40-50 minutes.
